inApparently I’m pretty good at going MIA. My apologies. It was a combination of my computer deciding to kick the bucket.. as in, it’s now a fire hazard. To say the least, it was not exactly usable. AND I went on a much needed vacation to the beach with my best friend. A MUCH needed break, let me tell you…
However, I am back, refreshed, and with a new computer to boot. A snazzy new computer with an amazing version of Windows Live Writer that I have ZERO idea how to use. Nevertheless, regular blogging shall resume soon. In the meantime, have a fabulous weekend!

Apparently it’s been longer than I thought since I shared my eats with you guys as I have QUITE a bit of photos on my camera.. so here we go!
My favorite Naked smoothie!
I drank a serving of this smoothie after a workout for two days.. perfect post-workout drink!
Puffins and cereal..
And a Puffin yogurt mess today!
And yet more cereal..
And then began the oats…
Starting with overnight oats made with plain Greek yogurt, old fashioned rolled oats, milk, cinnamon, and a pinch of salt soaked overnight.
Topped with Barney Butter and strawberry preserves.
Yesterday morning I awoke with an intense craving for whipped banana oats..
Topped with Barney Butter, Crofter’s, and blueberries
Thus, a bowl of deliciousness!
And dinner last night was gooood…
My mom made burgers (turkey burger for me) topped with sauted onions and mushrooms.
Green beans and 1/2 of baked potato on the side.
And dessert? Also amazingly delicious.
FRESH strawberries topped with Light Cool Whip.
It’s really early around this area for strawberries but my dad managed to locate some for us. He bought a gallon the other day and this is what’s left..
You might say we like strawberries. Just a tad 😉
And finally, lunch today was a green monster and string cheese
While this GM was super good for me, it wasn’t winning any taste awards…
What is something exciting that has happened to you recently?!
I found out today that I was accepted to the apartment complex I fell in LOVE with and applied for near Winthrop! While everything isn’t quite for sure yet, it’s almost there!
AND I leave for the beach in 4 days for Spring Break!

inThis week I went on a date with a cowboy. A real life, from Idaho, horse riding, lasso throwing, campfire building, cowboy hat wearing, rodeo Cowboy. I know…
This week I’ve been focusing on the protein..
1 whole egg and 1 egg white with a side of cheese 🙂
A protein smoothie with 1 scoop of Jay Robb’s Vanilla Whey Protein powder, frozen pineapple, frozen strawberries, Greek yogurt, and nonfat milk.
Alongside a slice of deli ham and some more cheese.
I discovered a delicious post-workout beverage..
Vegetables hidden in a fruit and a lot of good for me things? I think so.
I enjoyed a delicious dinner on a sunny patio with my best friend…
A caeser salad that I only remembered to take a picture of halfway through..
And grilled chicken and veggies.
This week I remembered how delicious stove top whipped banana oats are..
Topped with Barney Butter…
This bowl was SO voluminous and delicious!
This week, I also threw out the health food rules and enjoyed a delicious dinner cooked by my mom..
Salmon “croquettes,” mac and cheese, and veggies.
Best meal of the week?
I think so.

Smoothies
And waffles
Lots of waffles
And I kind of LOVE Gluten Free Waffles. Just sayin…
They kind of sorta make a fabulous St. Patty’s breakfast. With coffee, of course.
2. I’ve been craving light meals lately… spring IS here!
3. Comfort food makes a hard day just a little bit better. Especially when it’s chicken and dumplings. Made by your mom.
4. I think my talent is salad eating.
My dad saw me making this Hugh Jass salad (lettuce, tomato, carrots, broccoli, raw corn, cucumber, turkey, ham, cheese, italian dressing) and says “there is NO way you’re going to eat all of that!” I laughed. And dominated said salad. Duh.
5. Spring break is in 2 weeks. 13 days from now I will be sitting on a beach. My birthday is exactly one month from today. Not that I’m counting or anything…

Yesterday
Breakfast..
Waffles, waffles, waffles.
Van’s Vitamin Boost Waffles with a banana.
“Lunch” was a random mishmash of things as I went about my day doing errands and then going to work.
Some extremely delicious almonds…
My favorite Z-Bar…
A protein smoothie that tasted like a pineapple milkshake!! <- AMAZING.
And this little gem I found…
Legit deliciousness.
And dinner was photographed but it was a Caesar salad and chicken tenders smothered in buffalo sauce, shared with my bestie.
Today
Breakfast today was again, waffles..
I’m so predictable.
Nature’s Path Gluten Free Waffles, to be exact.
Has anyone noticed all the gluten free things that have appeared on the blog lately?? More to come about THAT soon…
